RECIPE: Easy-Peasy Chocolate Cake

3 cups good-quality cocoa

Preheat the oven to 180C. Grease a 3cm-deep, 34cm x 24cm slice tin. Line base and sides with baking paper, allowing 3cm overhang at long ends. Combine first lot of sugar, butter, bicarb, cocoa and two cups of cold water in a saucepan over low heat. Cook, stirring for 5 minutes until sugar dissolves. Bring to the boil. Reduce the heat to medium. Simmer for 2 minutes or until mixture boils. Transfer to a big bowl. Cool for 15 minutes.

Add flour and eggs. Using an electric mixer, beat mixture until pale and smooth. Pour mixture into prepared pan. Bake for 35 minutes or until a skewer inserted in centre comes out clean. Stand in pan for 10 minutes. Turn, top side up, on to a wire rack to cool completely. For frosting, place butter, caster sugar and 2 tablespoons cold water in a saucepan over medium-high heat. Bring to the boil. Remove from heat.

Sift icing sugar and cocoa into a bowl. Gradually add butter mixture. Stir to combine. Cover. Refrigerate for 30 minutes or until frosting thickens. Beat with a wooden spoon until spreadable. Split the cake with a big knife and spread one-third of the frosting through the centre.

Top with the other half of the cake and spread remaining frosting over the top.

2 Weeks have passed and I’ve made this cake three times. I’m addicted. Thankfully each time I’ve made this cake it went home with somebody else and was not left under my care. Let me just tell you that I’m not really a “chocolate”  girl, so you know this must be good if I’m craving it. This recipe originally called for safflower oil which I didn’t have on hand, so I used my trusty go-to replacement, olive oil. This is by far the richest, densest, moistest, best tasting chocolate cake you will ever make. Trust me.
