Restaurant Profiles: The Springtown Inn


History: The Springtown Inn opened in the 1830s as the Springtown Hotel, back when Route 212 was a dirt road. “(Since 1831) it was always an inn and always open to my knowledge,” says owner Robert Monach Sr., who believes the building may have been a funeral hall and livery stable in the 1800’s. Today the downstairs is divided into a main dining area, more casual tavern room, bar and a smattering of tables lining the outdoor patio. Upstairs, private parties can book two rooms for baby and bridal showers, weddings, and birthday and retirement lunches.

Ambience: The tranquil inn fits perfectly into its country setting, the inn taking as much splendor from the surrounding village as the village borrows from the inn. There’s a wood-burning fireplace by the bar for those cold winter nights and a stone archway that leads guests into the restaurant’s main dining room, with a ceiling draped in exposed beams. The vibe is at once cozy and familiar.
Culinary style: “Quaint American fine dining,” says Monach of his menu. The prime rib comes in one-, three-, and six-pound mammoth portions and the seafood specials change weekly.

Sweets: And the desserts occupy a full-sized dinner plate. The coconut custard cake is six layers deep and is described by General Manager Bobbie Gianguzzi as a coconut crème pie stuffed inside a coconut cake. The mountain-high strawberry shortcake is reminiscent of Hess’ strawberry pie, Gianguzzi says. All desserts are $7 and change daily.

Libation Station: Springtini (Malibu rum, orange vodka, cranberry juice, orange juice) — $10; Crème Brulee Martini (vanilla vodka, Chambourd, cream and Bailey’s) — $10.

Now you can give it a cheese cake flavor if you skip out on the cacao butter, but then you also lose more solidity in the structure. Adding a bit more lemon should help with this. 1 ½ C of Almonds (Really Raw Soaked for 12 Hours. Drained and Rinsed) 1 ½ C of Raisins (Golden Hunza are my fave, but regular will do the trick too!)

Add your almonds and raisins to your food processor and process until it sticks to the sides. You will have some whole raisins left, it’s ok. It just adds to the flavor.

Take your mixture and pour it into your glass pie plate. Your crust should reach at least half way up the sides of the pie plate. Smooth the crust with your hands. You can also use the backend of your table spoon to easily flatten and shape your crust.

Place Cacao butter in mason jar with lid and sit it in a bowl of hot water. This is ONLY if you don’t have a dehydrator. If you do have a dehydrator, set it to 95 degrees and allow it to melt. Check on it every 5 minutes or so. A good size chunk to use can easily fit in the palm of your hand or on your table spoon. You can use any leftover Cacao Butter for your face, body or maybe make some candies!
